Mandy Popejoy, a specialty cake designer, wife, and mom to 3 beautiful children, is the founder and owner of My Sweet Insanity Cake Designs in Lubbock, Texas. My Sweet Insanity was formed as a result of Mandy's love for baking and art.
Her passion started with creating her daughter's first birthday cake. realizing she had a talent for it, she began taking classes.
Now 20 plus years in the business she still loves to create unique cakes for weddings. Her work has been in Cake Central Magazine and has won the wedding cake division at "That Takes the Cake" show in Austin, Texas. Also has participated in "the Big Bake" Food Network series. She has learned from some of the best in the industry and wants to also be able to give back and teach others what she knows.
She is constantly learning new techniques and specializes in hand crafted sugar flowers.
